A three week carbonic infusion-maceration for everything, with the 2021 (37%) aged in stainless steel and the 2020 (8%) (the press-juice from Field Notes 2) aged in neutral Burgundy barrel.\u003c\/p\u003e\n\u003cp\u003ePinot Noir (41%) from 2021 was grown by our friends Lucie \u0026amp; Jules at Ham Street, Kent, most (32%) saw a five-day whole bunch maceration before pressed to Burgundy barrels to complete fermentation and ageing.
